Today’s grocery haul. It’s crazy how the ratio of produce to processed foods has changed in the past few years in terms of what I shop for. Cooking for myself has made such a huge difference. It used to be such a struggle to stay out of the snack aisle, now I don’t even think about it (I’m still a sucker for the register candy bars though). Eating fresh food has made such a difference in how my body feels, I’m never going back. :)

This recipe has been on my list for weeks and I’m so glad I finally remembered to grab the groceries! It’s absolutely delicious and so quick and easy to make. You can chop everything while the quinoa cooks.

Here’s a few other great additions:

  • feta cheese (regular or low fat)
  • grilled chicken
  • baked tofu
  • diced peppers
  • roasted eggplant
  • raw or lightly baked chickpeas
  • arugula or spinach
  • chopped olives

And here’s a few of my favorite ways to use it:

  • just as is for a snack
  • over a bed of mixed greens with extra lemon juice
  • on a wrap with hummus
  • stuffed in a roasted pepper
  • served under grilled fish
